Premium wild-caught cold water lobster tails from the North Atlantic waters of Maine and Canada. These are Homarus americanus, the largest lobster species, prized for their exceptionally sweet, delicate flavor and firm texture. Cold water lobsters grow slowly in frigid temperatures, which produces meat that is naturally sweeter and firmer than warm water varieties.
Each tail contains succulent, tender meat with a mild oceanic character and no fishy taste. The tails are flash-frozen immediately after harvest to preserve freshness and quality. When cooked properly, the meat separates easily from the shell and has a moist, flavorful texture. Typical tails weigh 3-8 ounces each.
Best prepared by butterflying the tail lengthwise, basting with garlic butter, and broiling until the meat reaches 140°F internal temperature and turns opaque white. The shell transforms to a deep red color when exposed to heat due to astaxanthin. Other excellent preparation methods include steaming in salted water, grilling in the shell, or serving with beurre monté sauce. Always thaw frozen tails in the refrigerator and bring to room temperature before cooking. Pairs beautifully with melted butter, fresh lemon juice, steak, or enjoyed on its own as a luxurious treat.
