Sold fresh by the pound from the seafood counter, they are previously frozen and thawed for convenience.

Graded USDC Grade A for quality, these are dry scallops — never soaked in sodium tripolyphosphate or chemical additives — which means they sear properly without releasing excess water and hold their natural sweet, briny flavor.
