These wild-caught Atlantic sea scallops are graded U-10, meaning fewer than 10 scallops per pound — an exceptionally large size that makes them ideal for searing, grilling, or serving as a centerpiece protein. Sold fresh by the pound from the seafood counter, they are previously frozen and thawed for convenience.
Graded USDC Grade A for quality, these are dry scallops — never soaked in sodium tripolyphosphate or chemical additives — which means they sear properly without releasing excess water and hold their natural sweet, briny flavor. Caught on the Atlantic coast and processed in New Bedford, Massachusetts, they display the characteristic irregular shape and visible grain structure of genuine wild sea scallops.
