Wild U-20 brown shrimp are large, wild-caught shrimp available from Costco's fresh seafood counter, previously flash-frozen at sea to lock in peak ocean freshness before being thawed for sale. The U-20 designation indicates there are under 20 shrimp per pound, classifying these as extra jumbo-sized shrimp with a substantial, meaty texture.
Brown shrimp (Farfantepenaeus aztecus) are a prized wild species typically harvested from the warm, nutrient-rich waters of the Gulf of Mexico. They are known for their distinctly rich, slightly earthy flavor that sets them apart from farm-raised white shrimp, making them a favorite in classic Gulf Coast dishes such as shrimp and grits, gumbo, jambalaya, and étouffée. Wild-caught U.S. shrimp is recommended by the Monterey Bay Aquarium's Seafood Watch program for sustainability.
These shrimp are sold shell-on and are best prepared shortly after purchase. Rinse under cold water, peel, and devein before cooking. Due to their large size, they benefit from 4–6 minutes of cooking time by sauté, grill, or boil. They pair exceptionally well with butter, garlic, Cajun seasonings, and fresh citrus. As a previously frozen product, they should not be refrozen.
