Génépi Tomme de Savoie is a farmstead French Alpine cheese from the Savoie region, made with whole cow's milk by the producer Génépi. Unlike most Tomme de Savoie which uses partially skimmed milk, this version is made with whole milk, resulting in a richer, creamier cheese that closely reflects the terroir of the French Alps. The cheese features a thick natural rind and a smooth, buttery paste with earthy, mushroom-like flavors. It is aged 2 to 4 months and carries a Protected Geographical Indication (IGP) designation. Sold by weight per pound, priced per pound. Imported by Peterson Co., Auburn, WA 98002.
Pairs well with medium-bodied red wines like Pinot Noir and Gamay.
