Whole ocean perch typically weigh around 4 pounds and grow to about 20 inches in length. The fish features a light red skin with olive-green patches along the upper back. The firm, white flesh holds up well to a variety of cooking methods and seasonings.

Whole ocean perch is well suited for steaming, deep frying, roasting, or use in soups, chowders, and stews. In Asian cuisine it is often served whole — gutted, gilled, and either steamed or fried.
