Fresh wild-caught whole ocean perch, sold by the pound. Ocean perch (Sebastes alutus) is a sustainably managed Pacific rockfish prized for its mild, slightly sweet flavor and firm white flesh. Also known as Pacific ocean perch or POP, these fish are harvested from the cold, deep waters off the coast of Alaska and the West Coast of North America under strict U.S. fishery regulations.
Whole ocean perch typically weigh around 4 pounds and grow to about 20 inches in length. The fish features a light red skin with olive-green patches along the upper back. The firm, white flesh holds up well to a variety of cooking methods and seasonings.
Whole ocean perch is well suited for steaming, deep frying, roasting, or use in soups, chowders, and stews. In Asian cuisine it is often served whole โ gutted, gilled, and either steamed or fried. The mild flavor pairs well with light sauces, ginger, garlic, and fresh herbs. The fish should be gutted and gilled before cooking whole, or it can be filleted for other preparations.
