Fresh wild Dover Sole fillet is a premium flatfish with mild, slightly sweet flavor and tender, delicate texture. Pacific Dover Sole is a sustainable white fish wild-caught along the West Coast of the United States, from California to Alaska. Despite its common name, it is actually a right-eyed flounder rather than a true sole, inhabiting depths from 300 to 4,500 feet on the outer continental shelf.
This lean fish features glistening white raw meat that remains white when cooked, with thin fillets that separate easily from the bone and cook quickly. The flavor profile is mild and buttery with a slightly nutty finish, and the texture is dense yet tender with smaller flakes. Pacific Dover Sole is one of the most abundant fish species on the West Coast and is certified sustainable by the Marine Stewardship Council and rated a "Best Choice" by Seafood Watch.
Culinarily versatile, Dover Sole is ideal for pan-frying, sautéing, baking, poaching, broiling, or acid-curing for ceviche. It pairs beautifully with butter, lemon, capers, and herbs, and its mild flavor makes it a perfect canvas for sauces from around the world. Classic preparations include Sole Meunière (pan-fried in brown butter with capers and lemon), breaded and oven-fried fillets, or rolled with flavorful fillings.
