Mercury Rising is Cinnabar Winery's flagship California red wine, first released in 1991. It is a classic Bordeaux-style blend crafted from premium vineyards across California, delivering a wine that is easy to enjoy yet sophisticated enough to complement a fine meal.

The 2021 vintage opens with aromas of black cherry, plum, and toasted oak. On the palate, flavors of blackberry and currant are balanced by supple tannins and a long, smooth finish. The blend is composed of 48% Cabernet Sauvignon, 33% Merlot, 10% Cabernet Franc, 7% Petit Verdot, and 2% Malbec, aged 16 months in French and American oak. Alcohol content is 14.5%.

Pairs excellently with grilled steaks, roasted lamb, hearty pasta dishes, and aged cheeses.
