Kirkland Signature USDA Prime Beef Loin Top Sirloin Caps are sold as a full case, priced per pound, making this an ideal buy for bulk cooking, entertaining, or restocking a home freezer. The top sirloin cap — also known internationally as "Picanha" — is a highly prized cut taken from the cap muscle that sits atop the top sirloin. It features a thick fat cap on one side that renders beautifully during cooking, basting the meat in its own natural juices.
USDA Prime is the highest grade awarded by the U.S. Department of Agriculture, representing the top 2–3% of all beef produced in the country. Prime-grade beef is characterized by abundant marbling — the fine, white flecks of intramuscular fat that melt during cooking to deliver exceptional tenderness, juiciness, and rich beef flavor. Costco is one of the few retailers that offers USDA Prime beef at warehouse prices, and the full-case format provides significant value per pound compared to individual retail packaging.
The top sirloin cap is highly versatile in the kitchen. It can be grilled whole over high heat and sliced against the grain, cooked as individual steaks, or slow-roasted and served Brazilian churrasco style skewered on rotisserie.
