Columbus Italian Dry Salame is a classic charcuterie staple sold by the pound at Costco's deli counter. Each piece is sold as a random weight item averaging approximately 3 lbs, whole and unsliced, requiring refrigeration. This is the full-size deli log, ideal for slicing to your preferred thickness at home or for commercial use.
Columbus has been crafting this salame in San Francisco since 1917, adapting a traditional Milano-style recipe. It is made with select cuts of pork, cracked black pepper, a signature proprietary blend of spices, and burgundy wine, which imparts a distinctive richness, aroma, and a subtle bite. Each log is slow-cured and aged 21 to 33 days depending on size, developing a deep, full-bodied flavor. The product is gluten-free with no added MSG.
Pairs well with aged cheddar, Pinot Noir, or a crisp Pilsner. Excellent on charcuterie boards, in sandwiches, or enjoyed on its own with bread and cheese.
