Wild-caught U-8 Grade A sea scallops, sold by the pound and previously frozen for freshness. The U-8 designation means fewer than 8 scallops per pound, making these among the largest and most premium sea scallops available. Grade A is the highest quality rating assigned by NOAA, indicating excellent appearance, good odor and color, and no obvious blemishes or defects.
These scallops are all-natural dry scallops, meaning they have not been treated with sodium tripolyphosphate (STPP), a chemical additive commonly used to increase water weight in lesser-quality "wet" scallops. Dry scallops sear beautifully, developing a golden-brown crust, and deliver a sweet, buttery flavor with a tender, meaty texture. They are ideal for pan-searing, grilling, broiling, or preparing dishes like Coquilles Saint-Jacques.
Wild-caught scallops are considered a sustainable seafood choice. They are responsibly harvested under regulations that protect habitat and minimize bycatch. Previously frozen at peak freshness to lock in quality, these scallops should be thawed in the refrigerator before cooking.
