These wild-caught Atlantic sea scallops are among the largest available, with a U-8 rating indicating fewer than 8 scallops per pound. Harvested from the Atlantic Ocean and processed in New Bedford, Massachusetts, they carry the USDC (U.S. Department of Commerce) Grade A designation, certifying top-tier quality and freshness inspection standards. The 2.5 lb bag delivers substantial portions at an excellent per-pound value compared to fresh seafood markets.

These are dry scallops, meaning they have not been soaked in sodium tripolyphosphate (STP), an additive commonly used to artificially inflate the weight and mask off-flavors in lower-grade scallops. Dry scallops caramelize beautifully in a hot pan, developing a rich golden-brown crust while retaining their naturally sweet, buttery flavor. Previously frozen using Individual Quick Freezing (IQF) to lock in freshness at peak quality, they thaw cleanly without excess water release.

For best results, thaw overnight in the refrigerator and pat completely dry before cooking. A cast iron pan heated until smoking with a small amount of butter or neutral oil produces a perfect golden sear in 2 to 3 minutes per side. Season simply with salt, pepper, and a squeeze of fresh lemon to showcase the natural sweetness of the scallop.
