Fresh wild-caught corvina fillet sold by the pound from Costco's fresh seafood counter. Corvina, also known as Gulf Corvina, belongs to the drum and croaker family and is prized for its mild, sweet flavor and firm, large-flaked white flesh. The fish appears pinkish when raw and cooks up beautifully white, making it visually appealing on the plate.

Corvina is harvested from warm-temperate and tropical waters, with most supply sourced from Central America, using methods including bottom trawl, gillnet, and handline. Its texture is comparable to sea bass — firm yet delicate — making it suitable for a wide variety of preparations. Corvina is especially popular for ceviche, as its firm flesh holds up well to acid, but it is equally well suited to baking, grilling, pan-searing, and broiling.
