Fresh wild whole petrale sole (Eopsetta jordani) is a premium Pacific flatfish caught along the West Coast of North America, ranging from Alaska to Baja California. Sold whole per pound at the Costco meat counter, this fish is prized by chefs and home cooks alike as the most flavorful and desirable of the Pacific flounders.
Petrale sole features a mild, delicately nutty, and sweet flavor with small, firm flakes and a delicate texture. Its average catch weight is about 2 pounds, though it can grow up to 2 feet in length. The whole fish yields approximately 30% skin-off fillet meat. It is well-suited to a wide range of cooking methods including baking, broiling, grilling, sautéing, poaching, deep-frying, steaming, smoking, and raw preparations such as sushi and crudo.
This fish is wild-caught using bottom trawls at depths of 300 to 500 feet on the Pacific Coast and is sustainably managed under the Pacific Coast Groundfish Fishery Management Plan by NOAA Fisheries and the Pacific Fishery Management Council. The Pacific Coast stock is certified not overfished and is rated a "Best Choice" by Seafood Watch. It is also known by the alternate names California Sole, Brill, Flounder, Jordan's Flounder, and Round-Nosed Sole.
