Gundlach Bundschu Cabernet Sauvignon is an estate-grown Bordeaux-style red wine from California's Sonoma Valley, produced at the historic Rhinefarm estate on the steep southwestern slopes of the Mayacamas Mountains, eight miles north of San Pablo Bay. The vines are planted between 150 and 300 feet in elevation on shallow rhyolitic volcanic ash soils, where pervasive maritime breezes and long daylight exposure allow the fruit to develop intense concentration while retaining vibrant structure.
The blend is anchored by Cabernet Sauvignon with complementary lots of Petit Verdot, Malbec, Merlot, and Cabernet Franc. Grapes are hand harvested in cool morning hours by block, optically sorted, and given a five-day cold soak before fermentation using a combination of indigenous yeasts and selected strains. The wine is aged 18 months in 100% French oak barrels, with 45% new wood from premier cooperages including Vicard, Taransaud, and Ermitage. Expect aromas of dried black fig, black truffle, and oak char, with a palate of black currant, blackberries, cocoa nibs, dark chocolate, graphite, and cedar, backed by a firm, food-friendly tannin structure.
Gundlach Bundschu's Rhinefarm Cabernets are designed to age beautifully for up to ten years and beyond, rewarding patience with evolving complexity. They pair exceptionally well with a perfectly seared steak, hearty stews, and hard cheeses such as Cheddar, Gouda, Asiago, and Parmigiano-Reggiano. Costco carries this wine as a case of 12 bottles (12 x 750ml).
