Moses Sleeper is a soft-ripened, Brie-style cheese made by Jasper Hill Farm in Vermont's Northeast Kingdom. Crafted from pasteurized cow's milk, it features a thin, edible bloomy rind surrounding a gooey, richly flavored paste. At peak ripeness, the cheese develops a complex array of flavors including cauliflower, crème fraîche, and toasted nuts, finishing with a bright, clean note and a subtle hint of white mushroom aroma.
