Fresh wild-caught Pacific coho salmon (Oncorhynchus kisutch), sold whole with the head on and priced per pound. This fish is troll-caught, a premium low-volume commercial fishing method that uses individual hook-and-line gear, producing higher-quality product with less bycatch compared to net fishing.
Wild coho, also known as silver salmon, features distinctive dark metallic blue-green backs and silver sides. The flesh is reddish-orange with a mild, delicate flavor and a high oil content that gives it a soft texture when raw, becoming firm and flaky when cooked. Coho is leaner than Chinook or sockeye but richer in fat than chum, making it a versatile mid-range option for grilling, baking, broiling, pan-searing, or steaming. Sourced primarily from Alaska and managed under NOAA Fisheries regulations, U.S. wild-caught coho is not subject to overfishing.
Coho salmon is a lean source of protein rich in omega-3 fatty acids, niacin, vitamin B12, selenium, and vitamin D, and is low in sodium. Buying the fish whole with the head on preserves maximum freshness, allows for whole-roasting or poaching, and provides the head and bones for making stock.
