Fresh wild-caught coho salmon sold whole with the head on, priced per pound. Also known as silver salmon, coho is a Pacific species prized for its bright orange-red flesh, medium fat content, and mild yet distinctly salmon flavor — less intense than sockeye but richer than farmed Atlantic.
Whole head-on presentation is ideal for roasting, steaming, or grilling the fish intact, which helps retain moisture and flavor during cooking. The head and collar contain some of the most flavorful meat on the salmon. Coho salmon is an excellent source of omega-3 fatty acids, high-quality protein, and vitamins B12 and D. It pairs well with citrus, fresh herbs, garlic, and light sauces.
Wild-caught coho from Alaskan and Pacific Northwest waters is sustainably managed under strict fishery guidelines. Fresh fish should be stored at or below 40°F and cooked within 1–2 days of purchase for best quality.
