These wild-caught U-12 brown shrimp are sold fresh from the seafood counter, priced per pound. The "U-12" designation means there are under 12 shrimp per pound, classifying them as colossal-sized — among the largest shrimp commercially available. Brown shrimp (Farfantepenaeus aztecus) are a premier wild-caught species native to the Gulf of Mexico and South Atlantic waters, prized for their slightly sweet, briny flavor and firm texture.
