This premium grade represents the top 2-3% of beef and delivers exceptional flavor, tenderness, and juiciness. The chuck roll typically weighs 13-21 pounds per full case and is known for its robust beefy flavor and rich marbling throughout.
This versatile cut is ideal for slow cooking methods including braising, stewing, and pot roasting where the connective tissue breaks down to create exceptionally tender results. It can also be broken down into specialty steaks including chuck eye steaks, Denver steaks, and Sierra steaks. Popular preparations include classic pot roast, beef stew, slow-cooked shredded beef, and premium burger blends.
