USDA Choice whole beef tenderloin, vacuum packaged for optimal freshness. This premium cut comes from the short loin primal, located along the underside of the steer between the sirloin and rib sections. The tenderloin is one of the most naturally tender cuts of beef due to minimal connective tissue and light marbling, offering a fine, smooth texture ideal for special occasions.
Whole tenderloins typically weigh 5 to 7 pounds and feature a distinctive tapered tube shape. This versatile cut can be roasted whole, grilled, or sliced into filet mignon steaks and medallions. For best results, thaw in the refrigerator for 24 hours, pat dry, trim any excess fat and silver skin, then roast at 400°F for 30-45 minutes to an internal temperature of 120-135°F for medium-rare. Rest for 5 minutes before slicing. The vacuum-sealed packaging also allows for convenient freezer storage.
