Fresh lingcod fillet wild-caught from the U.S. West Coast, sold by the pound at Costco's seafood counter. Despite its name, lingcod (Ophiodon elongatus) is neither a true cod nor a ling but belongs to the greenling family, inhabiting the rocky reefs and kelp forests of the Pacific coast from California to Alaska. Between 10–20% of lingcod naturally develop a striking blue or green color in the flesh, which fades to bright snow-white upon cooking.

The thick fillets offer a mild, slightly sweet flavor with a firm texture and large, moist flakes. This versatile fish works well with most preparation methods — baking, grilling, and pan-frying are particularly well-suited to its chunky cut, and it is a West Coast staple for classic fish and chips, fish tacos, and pan sauces. Its denser flesh benefits from slightly longer cooking times compared to other white fish; it is important not to overcook, as the lean meat can dry out quickly.

Nutritionally, lingcod is low in fat (0.9g per 100g) and high in protein (19g per 100g) at approximately 87 calories per 100g. It delivers twice the Omega-3 content of Atlantic cod and stands out as one of the best dietary sources of phosphorous, selenium, and potassium.

Lingcod is certified sustainable by the Marine Stewardship Council since 2014 and is rated a "Best Choice" by Seafood Watch. The fishery is managed under the federally appointed Pacific Fishery Management Council with science-based catch limits and 100% independent observer coverage on trawl vessels.
