Fresh wild-caught whole black cod, also known as sablefish or butterfish. This premium deep-water fish is native to the Pacific Northwest and Alaska, prized for its exceptionally rich, buttery flavor and silky, melt-in-your-mouth texture due to its naturally high oil content. Sold whole by the pound, the fish typically weighs between 5 and 7 pounds and arrives fresh, head-on and gutted.
Black cod is one of the most omega-3-rich fish available, containing approximately 1,792 mg of EPA and DHA omega-3 fatty acids per 100 g serving, nearly twice that of wild king salmon. A 100 g raw serving provides 195 calories, 13.4 g of protein, and 15.3 g of total fat. It is also an excellent source of selenium, vitamin B12, magnesium, and iron.
Whole black cod is highly versatile and well suited for roasting, grilling, steaming, or preparing as traditional Japanese miso-marinated black cod. The large, white flakes and velvety texture make it a favorite among home cooks and professional chefs alike.
