Berthaut Époisses is one of France's most celebrated washed-rind cheeses, produced by Fromagerie Berthaut in the village of Époisses, Burgundy, France. It holds both AOC (Appellation d'Origine Contrôlée) and PDO (Protected Designation of Origin) status, ensuring strict control over its place of origin and traditional production methods. Each 8.81 oz (250g) wheel is presented in a characteristic round wooden box that helps the cheese breathe and keeps its shape.
Made from pasteurised cow's milk and washed with Marc de Bourgogne — a local Burgundian grape brandy — Époisses develops its signature orange rind and intensely savory aroma. The interior is superbly creamy and unctuous, becoming soft and runny at room temperature. The flavor profile is nutty, buttery, and savory, growing more complex and pungent as the cheese matures. For serving, remove from the refrigerator about 30 minutes before eating. Cut a hole at the top and scoop out the creamy interior to spread over a fresh baguette or crackers. It pairs beautifully with bold Burgundy, Champagne, or Sauternes, and is excellent alongside fresh grapes or other fruit.
