Maseca White Corn Flour is an instant corn masa flour produced by Azteca Milling under the Maseca brand. The #0 grade is a special regular fine grind, widely used in commercial and home kitchens for making tortillas, tamales, sopes, gorditas, pupusas, and enchiladas. This 22-pound bag yields up to 40 pounds of finished tortillas and is a high-volume staple for families and food service operations alike.
Preparation is simple: add water and mix. Combine 2⅔ lbs of flour with 1⅔ quarts of water, mixing for 2 minutes until a smooth, pliable dough forms. Divide into 1-ounce balls, press to 5 inches in diameter using a tortilla press, and cook on a medium-high skillet for 30 seconds per side, turning 3 times. Finished tortillas can be refrigerated for up to a week. This flour is naturally gluten-free, contains no preservatives, and is made from corn treated with hydrated lime (nixtamalized).
