Kirkland Signature USDA Choice Boneless Beef Chuck Short Ribs are cut from the chuck (shoulder) area of the beef, featuring excellent marbling and rich, deep beefy flavor. This cut, also known as NAMP 116A Chuck Flap Edge, is a continuation of the muscle that makes up the prime rib. The boneless short ribs contain connective tissue and fat that breaks down beautifully during slow cooking methods such as braising, smoking, or slow-roasting, resulting in tender, succulent meat.
