Domaine William Fèvre Chablis Champs Royaux is a classic white Burgundy from the Chablis appellation in France, produced by one of the region's most celebrated and storied estates. Founded in 1959, Domaine William Fèvre is widely regarded as a benchmark producer in Chablis, with a legacy of crafting wines that express the unique terroir of the region. The estate was acquired by the Henriot family in 1998 and has since earned "High Environmental Value" (HVE) certification, the highest level of environmental recognition in France.
This wine is made from 100% Chardonnay, sourced from approximately 50–70% estate fruit, with vineyards planted on Kimmeridgian soils rich in minerals and ancient oyster fossils—the geological hallmark of Chablis. The wine is crafted through traditional vinification: roughly 40% fermented in older oak barrels and 60% in stainless steel vats, followed by malolactic fermentation for a balanced, linear style.
On the nose, Champs Royaux offers a very fresh bouquet with notes of citrus and white-fleshed fruit with a slightly oaky finish. On the palate it is fresh and supple, marked by characteristic steely minerality, bright lemon, green apple, and a crisp texture that gives shape and intensity. This wine has received 90 points from both Wine Spectator and Vinous, and 93 points from Wine Enthusiast, where it was named #66 in the 2020 Top 100.
