D'Aquino Amarone della Valpolicella is an Italian DOCG red wine crafted using the traditional appassimento method, where harvested grapes are carefully dried on racks for approximately 120 days before fermentation. This centuries-old technique concentrates the sugars and flavors through water evaporation, resulting in a rich, full-bodied wine with exceptional depth and complexity.
Made primarily from Corvina grapes blended with Rondinella and other approved varieties from the Valpolicella region in Veneto, Italy, this wine exhibits the hallmark characteristics of Amarone della Valpolicella Classico. The extended drying process creates wines with minimum 14% alcohol content, though many reach 15-16%, giving the wine great viscosity and a silky texture.
After fermentation, the wine undergoes a minimum 2-year aging period in wooden barrels, developing complex layers of dried fruit, raisins, plum, blackberry, dark cherry, and subtle notes of meat, earth, and spice. The mouthfeel is smooth and well-integrated, with flavors of blackberries, raisins, and savory elements.
