M. Chapoutier Bila-Haut Côtes du Roussillon is a red wine from the Roussillon appellation in southern France, produced by the celebrated Rhône Valley négociant and biodynamic pioneer Michel Chapoutier. The Domaine de Bila-Haut estate, located in the Fenouillèdes foothills near the Pyrenees, benefits from a rugged Mediterranean climate with intense sun, low rainfall, and mineral-rich schist soils that impart distinctive character to the grapes.
This wine is a classic Southern French blend of Syrah, Grenache, and Carignan sourced from old vines. It delivers aromas of ripe dark fruit — blackberry, plum, and black cherry — with notes of garrigue (wild herbs), black pepper, and a touch of earthy minerality. On the palate it is full-bodied with soft tannins, lively acidity, and a long, spiced finish. Michel Chapoutier practices biodynamic viticulture across all his estates, and all labels are printed in Braille as part of his commitment to accessibility.
This wine pairs well with grilled meats, lamb, charcuterie, aged cheeses, and hearty Mediterranean dishes. Serve at 16–18°C (61–64°F). Alcohol approximately 14% by volume.
