Costco's boneless chuck short ribs feature premium American Wagyu beef, vacuum packaged for maximum freshness and sold by the pound. American Wagyu cattle are raised in the United States using Wagyu genetics crossed with American breeds, producing beef with exceptional intramuscular fat marbling that far exceeds typical USDA Prime grades. The result is a deeply flavorful, richly textured cut with the hallmark buttery richness associated with Wagyu beef.
Boneless chuck short ribs are cut from the chuck section of the animal and are one of the most versatile beef cuts available. They can be cooked quickly over high heat — seared to medium-rare for a steak-like experience — or prepared low and slow through braising, smoking, or sous vide, which renders the fat and breaks down connective tissue to produce fork-tender results. They are well suited for Korean-style galbi, red wine braises, smoked barbecue, and sous vide preparations.
