Fresh wild-caught Atlantic haddock fillet, a premium whitefish and member of the cod family. Haddock features a delicate flake and slightly sweet taste with a melt-in-the-mouth appeal. The lean meat has a firm yet tender texture with a finer flake than cod. Raw meat is white and cooks up even whiter.
Haddock is caught from the cold, clean waters of the North Atlantic, with highest concentrations on Georges Bank and the Gulf of Maine. This species is typically harvested by longlines and trawl nets and is Marine Stewardship Council (MSC) certified for sustainable fishing practices. The fish bears a distinguishing black mark, often called the "devil's thumbprint" or "St. Peter's mark," in the shoulder area.
Versatile for cooking, haddock excels in multiple preparations including pan frying, poaching, sautéing, baking, broiling, and smoking. The meat holds together well during cooking and is excellent in soups and stews. Smaller fillets are easily sautéed while all sizes work well poached. Popular in fish and chips and as the famous cold-smoked finnan haddie.
