Each wheel is aged for 10 months in special caves, where Master Cheesemakers carefully inspect and hand-turn each wheel to ensure a consistent aging process. This expert care develops the cheese's rich nutty flavor and tantalizing aroma. The cheese has a hard, granular texture with a golden yellow appearance and a quarter to half-inch rind.
