DeLille Cellars Chaleur Estate is a Cabernet Sauvignon-dominant Bordeaux-style red blend from Washington State's Yakima Valley, crafted by one of the Pacific Northwest's most acclaimed wineries. The wine draws fruit primarily from the prestigious Red Mountain AVA vineyards of Ciel du Cheval and Klipsun, with additional sourcing from DuBrul Vineyard in Yakima Valley.
The blend is composed of approximately 65% Cabernet Sauvignon, 24% Merlot, 9% Cabernet Franc, and 2% Petit Verdot. Following harvest, the wine is fermented in stainless steel with 14–16 days on skins, then barrel aged for 20 months in French oak (93% new), and bottle aged an additional 10 months prior to release. On the nose, it opens with aromas of marionberry, black cherry, dried violets, crushed sagebrush, cedary herbs, and graphite. The palate delivers concentrated flavors of blackberry, cassis, crème de cassis, boysenberry, olive tapenade, hoisin, and tobacco leaf, with barrel-induced notes of vanilla bean, cinnamon, clove, and sandalwood. The tannins are fine-grained and velvet-like, providing structure without heaviness, with a lingering finish that rewards patience in the glass.
Chaleur Estate is DeLille Cellars' inaugural wine and the cornerstone of the winery's Bordeaux-inspired portfolio, first produced in 1992. The name reflects the French word for warmth. The wine is highly rated across leading publications, including 98 points from International Wine Report, 97 from Decanter, 95 from Jeb Dunnuck, and 94 from Wine Spectator. Enjoy on release with a patient decant, or cellar for 20 or more years. Pairs well with seared rack of lamb, hearty mushroom dishes, earthy risottos, and rich pastas.
