Bonterra Cabernet Sauvignon is a celebrated California red wine crafted from 100% certified organically grown grapes. Deep garnet in color with violet hues, the wine opens with inviting aromas of black cherry, black currant, and dried herbs. On the palate, rich layers of dark fruit are supported by earthy notes of leather, tobacco, and pencil shavings, with a medium-bodied structure, ripe tannins, and a smooth, lingering finish. The grapes are harvested between mid-August and late October to capture ideal ripeness and balance. Following harvest, the fruit undergoes warm fermentation in stainless steel tanks and malolactic fermentation to develop a velvety texture, then is aged for 15 months in French oak barrels — 40% new — imparting depth, structure, and elegant layers of oak spice. Sulfite levels are kept low (70–90ppm), well below the limits for conventional wine.
