Recanati Reserve Cabernet Sauvignon is a dry red wine from the Galilee region of Northern Israel, crafted by Recanati Winery from hand-harvested Cabernet Sauvignon grapes. The grapes are grown on the high slopes of Northern Galilee, where rocky, porous soil and cool sea breezes nurture the varietal to full expression. Harvesting takes place from late September through mid-October.

Following harvest, the must is chilled and cold macerated for three days to develop complex flavors and fragrance. After three weeks of fermentation, the wine is aged in small French oak barrels for 17 months, lending structure and depth. The wine carries 13.5% alcohol by volume and is certified Kosher for Passover (not Mevushal). It is sold in a standard 750ML bottle and offered in cases of six.

Rich dark fruit aromas of blackcurrant and plum are complemented by subtle notes of oak and spice. The wine pairs well with grilled skirt steak, lamb, hearty pasta sauces, and aged cheeses such as Gorgonzola.
