Chimay Grande Réserve, also known as "Chimay Blue" for its distinctive blue cap, is an authentic Belgian Trappist ale brewed by the monks of Scourmont Abbey since 1956. Originally created as a Christmas beer, this dark strong ale has become one of the world's most celebrated Trappist brews. At 9% ABV with 35 IBU, it delivers a powerful yet refined drinking experience.

The beer pours dark with a big creamy off-white head and presents a fragrant aroma of fresh yeast with subtle floral and rosy notes. On the palate, expect rich caramel and dark malt flavors complemented by mulling spices, dried cherry, and date reminiscent of a holiday fruit cake. The smooth palate features gentle roasted malt character with a hint of hoppy bite on the finish and warming alcohol presence.

This top-fermented Trappist beer is refermented in the bottle and unpasteurized, allowing its complex flavors to improve with age. Best served at cellar temperature between 10-12°C (50-54°F). Pairs excellently with standing rib roast, braised meats, and hearty holiday dishes.
