Choy sum has a mild, slightly sweet flavor with a tender texture that cooks quickly. It is highly versatile — ideal for stir-frying, blanching, or steaming. The classic preparation in Hawaii is to blanch the greens for 30 to 45 seconds until vibrantly green, then plate and drizzle with oyster sauce. It also pairs beautifully with garlic and soy sauce and complements proteins such as tofu, chicken, shrimp, or pork. Before cooking, rinse well and soak briefly in water to clean thoroughly. Store refrigerated, wrapped in a paper towel, for best freshness.
