Each 2-pound bag contains approximately 15 to 20 scallops per pound, hand-shucked immediately after harvest and individually quick frozen to lock in freshness. These U.S. Grade A scallops meet NOAA standards for excellent appearance, good odor, and color with no obvious blemishes or defects.

These are dry scallops, meaning they are not treated with sodium tripolyphosphate (STPP) or other chemical preservatives. Dry scallops are highly valued by chefs because they sear beautifully and develop a golden-brown crust, unlike wet scallops which release excess moisture during cooking. The restaurant-size scallops are versatile and perfect for pan-searing, broiling, grilling, or incorporating into dishes like Coquille St. Jacques.

To thaw, place the desired amount in a covered container in the refrigerator for approximately 8 hours. For quicker thawing, place scallops in a sealed bag and run under cold water for 7 to 10 minutes, rotating periodically. Thaw completely before cooking. Pat scallops dry and space evenly in a medium-high heat pan, cooking each side for approximately 2 minutes or until the center of the scallop appears opaque. Do not refreeze scallops once they are thawed.
