Poblano peppers are dark green, thick-walled chile peppers originating from the Puebla valley of Mexico, and Costco offers them pre-packaged in a convenient 2-pound bag of whole fresh peppers.
Known for their mild heat and rich, mellow flavor with subtle smoky undertones, poblanos register just 1,000 to 2,000 Scoville Heat Units — significantly milder than jalapeños. Their sturdy, thick-walled flesh makes them especially well-suited for stuffing, most famously in chiles rellenos, as well as for roasting, where the charred skin is peeled away to reveal a deeply flavorful pepper.
Poblanos are incredibly versatile in the kitchen. Use them whole or sliced in roasted vegetable dishes, blended into salsas and mole-style sauces, simmered into creamy soups, or cut into strips known as rajas. When allowed to fully ripen to red and then dried, the same pepper is called an ancho chile — a cornerstone of traditional Mexican cooking.
