Chile Products of NM Mild Red Chile Pods are sun-dried whole red chile pods sourced from New Mexico, packaged in a generous 2-pound (32-ounce) bag. Sold at select Costco locations in New Mexico, these whole dried pods represent the traditional New Mexico chile-making tradition rooted in the famed Hatch Valley growing region.
New Mexico red chile pods are the dried form of the Red Anaheim pepper, registering mildly on the Scoville scale — making them ideal for families and those new to red chile cooking. The mild heat allows the earthy, fruity undertones of the chile to come through without overwhelming spice. Their large, elongated shape (typically 5–7 inches) and low surface area exposure means these pods retain flavor and freshness longer than pre-ground red chile powder.
These pods are traditionally used to make authentic New Mexican red enchilada sauce by rehydrating and blending the pods into a smooth, velvety sauce. They can also be used to make red chile stews, posole, and tamale sauce. Blending whole pods produces a more emulsified, evenly textured sauce that resists separation compared to powder-based preparations. The pods can be stored on a ristra or in a cool, dry space for extended shelf life.
