Fromager d'Affinois is a luxuriously creamy, double-cream soft-ripened cheese crafted in the French countryside of Pélussin and Belley in the Auvergne-Rhône-Alpes region. First created in 1981 by Jean-Claude Guilloteau, this iconic French cheese is made using a unique ultrafiltration process that concentrates the milk proteins and cream, resulting in an exceptionally rich, silky texture that is even creamier than traditional Brie.
The cheese features a thin, bloomy white rind with a melt-in-your-mouth interior that becomes increasingly oozy as it ripens. Its flavor is mild and buttery with subtle earthy, mushroom-like notes from the rind. At 1 lb (454g), this wheel is ideal for entertaining, cheeseboards, or pairing with crusty bread, fruits, nuts, and wine. It pairs beautifully with Champagne, Chardonnay, or light Pinot Noir.
