J. Lohr Seven Oaks Cabernet Sauvignon is a classic Paso Robles red wine that has been crafted for thirty vintages. This wine is sourced from estate vineyards in Paso Robles AVA, San Luis Obispo County, California, featuring gravelly clay loam to limestone-based soils that contribute to its distinctive character.
The wine is a carefully crafted blend of 79% Cabernet Sauvignon, 12% Petite Sirah, 4% Petit Verdot, 3% Merlot, and 2% Malbec. It is aged for 12 months in 60-gallon American oak barrels (18% new), predominantly medium-plus toast Missouri and Minnesota oak with toasted heads, developing complex layers of flavor. The 2021 vintage experienced generous preseason rainfall followed by dry conditions that produced small, concentrated berries with optimal ripeness.
This balanced and fruit-forward wine features ripe fruit aromas of black cherry and currant accented by notes of toasted pastry, hazelnut, vanilla, cola, licorice, mocha, tobacco, and coffee from the barrel aging program. The palate is soft, smooth, and juicy with dense, velvety richness and supple tannins. It ends dry and long with lasting juicy fruit plus chocolate and vanilla notes. The wine has good structure and can age for seven years or longer.
With 14.0% alcohol content and just 0.6 g/L of residual sugar, this wine pairs excellently with grilled beef, lasagna, burgers, or dark chocolate. Produced from certified California sustainable vineyards, it has earned 90 points from Wine Enthusiast and a rating of 89-90 points with "Highly Recommended" status from Reverse Wine Snob.
