Beef loin flap meat steak is a versatile and tender cut from the bottom sirloin, also known as sirloin tip steak. This USDA Choice grade beef features moderate marbling that delivers excellent flavor and tenderness when properly cooked.
The flap meat cut is ideal for high-heat cooking methods including grilling, pan-searing, and stir-frying. It works exceptionally well for fajitas, carne asada, Korean BBQ, and Asian stir-fry dishes. The meat benefits from marinating to enhance its natural tenderness and can be sliced thin against the grain for maximum tenderness.
USDA Choice grade beef is selected for quality, with less marbling than Prime but still offering very tender, juicy, and flavorful results. This cut from the loin and sirloin areas is well-suited to dry-heat cooking methods. Each package is sold by the pound with variable weights.
