USDA Choice Beef Sirloin Tip Roast, also known as ball tip roast, knuckle roast, or round tip roast. This boneless, lean cut comes from the round primal and is located anatomically next to the tip of the sirloin. The whole sirloin tip is vacuum-sealed and sold by the pound, typically averaging 13 pounds. This versatile cut offers great value and is best when roasted and carved into thin slices, though it also responds well to braising methods.
Choice grade beef has less marbling than Prime but is still high quality. The muscles in the round area are used for movement, resulting in leaner, less tender meat that benefits from proper cooking methods. This cut can be prepared with dry heat roasting or moist heat braising techniques.
