Isla Brisa Bacalao Salted Pollock is a traditional salted fish made from wild-caught Alaska Pollock sourced from the cold waters of the North Pacific. Each 2-pound package contains skinless, boneless pollock fillets cured in the classic bacalao style using just two ingredients: pollock and salt. There are no additives, preservatives, or artificial ingredients.

Before cooking, fillets must be desalted by soaking in cold water for 48 hours with water changes every 12 hours, or a shorter 6–8 hour soak with at least three water changes for a quicker preparation. Once desalted, the fish can be pan-fried, grilled, baked, or used in traditional dishes such as Bacalao Guisado (stewed salt cod), Bacalaitos (cod fritters), Bacalao a la Vizcaina, or preparations with garlic and olive oil. The mild, flaky texture of pollock makes it an accessible and versatile choice for bacalao recipes.
