These are strips of nicely marbled chuck beef, approximately 10 inches in length, cut from the chuck section of the beef. The USDA Choice grade ensures good marbling and quality beef suitable for various cooking methods.
These boneless short ribs are highly versatile and work well for smoking, braising, sous vide preparation, hot-and-fast grilling in Korean Kalbi-style, or can be used for burgers and chili. Popular cooking methods include smoking at 225-275°F for approximately 4.5 hours to develop a bark similar to burnt ends, or sous vide at 131-143°F for 72 hours for optimal tenderness.
