Harbison is an award-winning soft-ripened artisan cheese made by Jasper Hill Farm in Greensboro, Vermont. Named for Anne Harbison, affectionately known as the grandmother of Greensboro, this decadent cheese is crafted from pasteurized cow's milk sourced from local pastured herds. Each wheel is wrapped in strips of spruce cambium, the thin inner bark layer harvested from the woodlands surrounding Jasper Hill Farm.
The cheese features a rustic, bloomy rind and develops a silky, spoonable texture as it ripens over 6-13 weeks in Jasper Hill's state-of-the-art underground cellars. The flavor profile is woodsy and sweet, with notes of sweet cream, button mushroom, lemon, mustard, raspberry, and vegetal undertones. The spruce bark imparts a distinctive pine aroma that complements the rich, buttery paste.
For serving, slice off the top rind and scoop out portions with a spoon or crusty bread. If the cheese is younger, the bark can be peeled away for sliced portioning. Harbison pairs beautifully with oaked white wine, barrel-aged sour beer, fruit mostarda, baguette, fresh fruits, and nuts. It can also be baked in pastry with raspberry jam for an elegant appetizer.
