Premium pork St. Louis style spare ribs sold in a full case by the pound with the brisket bone already removed for convenience. St. Louis cut ribs are trimmed spare ribs with the brisket bone, cartilage tips, and flap meat removed, resulting in a rectangular rack that cooks more evenly and presents beautifully. The brisket bone removal saves preparation time and reduces waste. These ribs feature rich, well-marbled meat between the bones with excellent flavor for smoking, grilling, or slow cooking. Costco sources St. Louis ribs from suppliers including Swift Premium and Farmland Foods. Popular preparation methods include applying a dry rub and smoking at 225-275ยฐF for 4-6 hours, or grilling with indirect heat. The membrane on the bone side is typically left intact and can be removed before cooking for better seasoning penetration and tenderness.
