San Simeon Cabernet Sauvignon is a premium wine from the renowned Paso Robles appellation in California. This artisan wine is crafted from 95% Cabernet Sauvignon and 5% Petit Verdot grapes sourced from the Stefano, Maddalena, and Pretty Penny estate vineyards in the El Pomar district. The wine is hand-crafted in small lots and aged for 18 months in 78% new French and American oak barrels and 22% neutral barrels.
On the nose, this wine features unmistakable aromas of black cherry, blackberry, vanilla, cedar, licorice, and baking spices. The palate delivers big, rich flavors of ripe plum, wild berry, blackberry, cocoa, and cedar, wrapped in layers of spice, chocolate, and vanilla. The wine has a smooth, lush texture with fine-grained tannins and solid acidity, ending with a long, dry finish with lasting vanilla and cocoa notes.
This 14.9% alcohol wine pairs exceptionally well with grilled meats, firm cheeses, charcuterie, grilled lamb chops with rosemary and garlic, and chocolate. Produced by winemakers Anthony Riboli, Arnaud Debons, and Ben Mayo, this wine has received critical acclaim including 91 points from Wine Enthusiast (2022), 91 points from James Suckling (2021 and 2019), and 92 points Editor's Choice from Wine Enthusiast (2019). The vineyards are certified sustainable by CSWA, and the Paso Robles winery uses 100% solar power.
