This is a commercial-grade boneless pork shoulder butt sold as a full case with an average weight of approximately 65 pounds. The pork shoulder butt, also known as Boston butt, comes from the upper portion of the pig's shoulder and is a versatile cut ideal for slow cooking, smoking, braising, or roasting. This boneless version has the blade bone removed, providing more uniform cooking and easier slicing while exposing additional surface area for seasoning and rub application.
The full case format is designed for food service operations, restaurants, and bulk purchasing through Costco Business Delivery. Each case contains whole boneless shoulder cuts that can be used for pulled pork, carnitas, stews, or ground for sausage. The boneless cut maintains excellent marbling and connective tissue that breaks down during low and slow cooking methods, resulting in tender, flavorful meat. For best results when smoking or slow cooking, many chefs recommend tying the meat with butcher's twine to maintain uniform shape and ensure even cooking throughout.
