USDA Choice beef eye of round is a lean, boneless cut from the hindquarter of the beef, positioned between the inside and outside round sections. This cut resembles a tenderloin in shape but has a firmer texture due to its minimal marbling and fat content. Full case typically contains approximately 6 pounds average weight per roast.
Choice grade beef features less marbling than Prime grade but maintains high quality standards based on maturity, texture, and lean color.
